Zesty Lime Chicken Recipe

Ingredients

6 broiler-fryer chicken breast halves, skinned and boned 1/3 cup fresh lime juice 2 teaspoons coarsely grated lime peel 1/4 cup olive oil 2 tablespoons chopped pimiento 2 garlic cloves, minced 1/3 cup chopped fresh cilantro 1/4 teaspoon pepper 1 1/2 teaspoons hot pepper sauce 1 1/2 teaspoons dried oregano 3/4 teaspoon salt lime slices cilantro sprigs

Cooking Instructions

In large shallow glass baking dish, mix together lime juice, lime peel, olive oil, pimiento, garlic, hot pepper sauce, cilantro, oregano, salt and pepper. Add chicken, turning to coat. Cover, place in refrigerator and marinate 30 minutes. Remove chicken from marinade; drain. In small saucepan, place marinade and bring to a rolling boil. Place chicken in broiler pan. Set oven temperature control to broil. Arrange oven rack so chicken is about 7 inches from heat. Broil, turning once and brushing often with marinade, 20 minutes. Brush chicken with marinade and broil aditional 5 minutes or until fork can be inserted in chicken with ease. Remove from broiler pan to serving dish and pour pan drippings over chicken. Garnish with lime slices and cilantro sprigs. Makes 6 servings.
