Coriander Chicken with Peanut Sauce Recipe

Ingredients

1 cut-up chicken
1/4 teaspoon turmeric
6 tablespoons soy sauce
1/4 teaspoon cayenne pepper
2 tablespoons honey
1 tablespoon ground coriander seed
2 garlic cloves, crushed
2 teaspoons finely grated gingerroot
Peanut Sauce: recipe follows

Cooking Instructions

Cut each breast half crosswise into 2 pieces. Cut 2 parallel diagonal slits on meat side of each piece of breast, thighs and drumsticks, cutting almost all the way through to the bone. In large bowl, mix together soy sauce, honey, coriander, garlic, gingerroot, turmeric and cayenne pepper. Add chicken, turning to coat. Refrigerate and marinate at least 45 minutes. Remove chicken from marinade and place, skin side down, on oiled rack of broiler pan. Set temperature control at Broil and arrange oven rack so chicken is about 6 inches from heat. Broil, turning once and basting with marinade, about 15 minutes or until golden brown and fork can be inserted in chicken with ease. Remove from oven and place on serving platter. Pass Peanut Sauce. Makes 4 servings.

Peanut Sauce:
In small bowl, mix together 4 tablespoons peanut butter, 4 tablespoons soy sauce, 2 tablespoons lemon juice, 3 tablespoons brown sugar, 1 1/2 teaspoons cayenne pepper and 2 tablespoons honey. Stir to blend.
